As the temperatures drop outside, it is time to cook up some chili!! Enjoy this feel-good satisfying dish. Because it contains several veggies, you will find that it is not only nutritious but delicious as well!
Ingredients:
- 2 lbs of ground turkey
- 1 can chicken broth low sodium, organic
- 2 (28 oz) cans crushed tomatoes chili style
- 4 tablespoons chili powder
- 1 large red onion diced
- ½ cup sliced green onion
- 2 cloves garlic diced
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 4 oz can diced green chilies
- 1 can black beans (rinsed and drained)
- 1 avocado
- 1 package shredded cheddar cheese
- Salt and pepper to taste
- 1 lime
- Fresh cilantro
Directions:
In a large Dutch oven, brown the ground turkey over medium high heat until thoroughly cooked. Add chicken broth and crushed tomatoes to the meat. Next add the vegetables, onions, green chilies, chili powder, and garlic. Mix all ingredients together thoroughly and bring to a boil. Finally, stir in black beans, add salt and pepper and allow chili to simmer 30 minutes stirring occasionally. Garnish with avocado, lime, cilantro, and cheddar cheese.
